A friend brought me a pile of Basil on Monday, so I made Pesto. We’re eating it tonight with pasta and grilled chicken, then this weekend on homemade rustic pizza. Can you tell I’m hungry NOW!
Here’s the super simple recipe I use:
PESTO
- 4 cloves garlic
- 4 cups fresh Basil
- 1/2 cup Pine Nuts
- 1/4 pound freshly grated Parmesan Cheese
- 1/4 pound freshly grated Pecorino or Romano Cheese
- 1 teaspoon Kosher salt
- 1/2 teaspoon freshly ground pepper
- 11/2 cups good Olive Oil
In a food processor, grind the garlic until minced. Add the remaining ingredients with 1/2 cup of the olive oil and process. Add the remaining olive oil and process until smooth.
